VEGAN BASIL PESTO

Pesto is the best(o) and my super easy vegan version only uses 5 ingredients and takes just 5 minutes to make💥

I’ve been making a double batch and keeping it in the fridge for the week! Stir it through pasta, jazz up your mayo for a tasty sandwich or spoon it into a toastie for extra flavour, the pesto-bilities are endless 🤤 (sorry, promise I’ll stop with the pesto puns now 😂)

Recipe makes enough for 2 portions of pasta

45g basil
1 garlic clove
1 tbsp nutritional yeast
1 heaped tbsp (20g) pine nuts
5 tbsp olive oil
2 tsp lemon juice
Generous pinch of salt & pepper, to taste

Add everything to a blender or small food processor and blend until smooth! Taste and add more lemon/nutritional yeast/salt and pepper if you need. You can also make it the traditional way using a pestle and mortar if you have one. Enjoy! 💛
