Braise a medium size onion in little oil
Add a heaped teaspoon of garlic and ginger paste and 1/2 tsp of mustard seeds
Cook for about 5 minutes
Add a finely chopped tomato and 1 tsp of tomato paste
2-3 finely chopped green chillies (optional)
Add salt to taste
1/2 tsp turmeric
1/2 – 1tsp chilli powder
1 level tsp garam masala
Add a cup of water
And cook for 5 minutes
Boil 5-6 eggs, cut it in half, warm a small pan with 1 TBSP of butter add a pinch of tumeric and fry boiled eggs in it for 1 minute a side.
Add to curry mixture and stir carefully
Garnish with fresh coriander.
