
4 pieces of bread (I used gluten free vegan white bread)
2 tablespoons olive oil
kosher salt
4 ounces smoked turkey
4 pieces crispy bacon
Chunky Guacamole:
1 large avocado, peeled, seeded and cut into chunks
2 tablespoons finely chopped red onion
2 tablespoons finely chopped fresh cilantro
½ limes fresh juice
kosher salt
In a nonstick pan over medium heat add the olive oil and the 4 pieces of bread. Toast until golden and then flip over and repeat. Total time should take about 5 minutes. Pile the smoked turkey, crispy bacon and guacamole on two pieces of the bread and top with the other two pieces. Slice in half and serve hot.
