French Fries Made Of Polenta And Herbs

Although polenta is most often prepared as a creamy side dish, this time we decided to prepare it in a different way. It looks like everyone’s favorite french fries, but it’s still a healthy and tasty snack.

French fries

160 g instant polenta (corn grits)
470 ml of water
1 clove of garlic
2 tablespoons fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
45 g grated parmesan
salt, to taste
3 tablespoons olive oil

Dressing

1 clove of garlic
3 tablespoons butter, melted
2 tablespoons fresh basil, chopped
1 tablespoon fresh oregano, chopped

Preparation

1Cook the polenta

Pour water into a medium-sized bowl and bring to a boil. Stir in cornmeal, chopped garlic, thyme, rosemary, grated parmesan and season with salt.

Stir until the polenta is soft and thick, about 5 minutes. Remove from heat, cover and leave for 5 minutes. 

2Freeze

Line a 20×20 cm baking sheet with baking paper and pour the cooked polenta on it. Distribute it evenly in one layer. Put in the freezer for 20 minutes. 

3Bake

Preheat oven to 220 degrees. Carefully remove the polenta to a cutting board and cut into thin french-like sticks.

Arrange the sliced ​​polenta on baking paper and pour over with olive oil and season with salt to taste.

Bake for 15 minutes, remove from the oven, carefully invert the sticks and bake for another 15 to 20 minutes or until crispy. 

Dressing

4Prepare the topping

Mix the topping ingredients and pour over the baked polenta. Serve with sauce as desired.
