Creamy Lemon Basil Rice

⁣2 tbsp vegan butter ⁣
⁣3 cloves garlic, minced⁣
⁣6 tbsp full fat coconut milk ⁣
⁣250ml cashew cream⁣
⁣1/2 tsp better than bouillon (veggie)⁣
⁣2 packs @palmini_official hearts of palm rice⁣
⁣1 lemon, zest + juice ⁣
⁣salt + pepper, to taste⁣
⁣a handful fresh basil⁣
⁣vegan parmesan⁣
⁣In a frying pan over medium heat, melt vegan butter. Add garlic and cook until fragrant. ⁣
⁣Stir in coconut milk, cashew cream and bouillon. Season and allow to simmer. ⁣
⁣Add @palmini_official rice and continue to cook until rice is hot and sauce thickens. Season, add lemon juice and zest. ⁣
⁣Top with fresh basil, vegan parm and caramelized lemon, if you’re into it. Enjoy!⁣
