Chickpea Ratatouille


This makes 2-3 servings⠀

1/2 onion – finely chopped⠀
3 cloves garlic – minced⠀
1 zucchini – diced⠀
1 red bell pepper – diced⠀
1/2 cup basil – finely chopped⠀
1/2 cup parsley – finely chopped⠀
1 tsp salt⠀
1 tsp oregano⠀
pinch red pepper flakes⠀
pepper to taste⠀
1 tbsp nutritional yeast⠀
1 tsp maple syrup⠀
1 can crushed tomatoes or tomato sauce⠀
1 can chickpeas⠀

Heat oil in a pan over medium heat. Add onion and cook for 5 minutes.⠀
Add garlic, zucchini and pepper to the pan. Cook for 5 more minutes. Add all remaining ingredients except for chickpeas. Cover and simmer for 10 minutes.⠀
Lastly add chickpeas and simmer for 5 more minutes.
