CHERRY TOMATO, GARLIC & CHILLI ORZO

My obsession with tomatoes continues πŸ™‹β€β™€οΈ really trying to make the most of tomato season while it lasts πŸ˜…πŸƒ

This is one to make over the weekend – perfect comfort food packed with the summery flavours of ripe cherry tomatoes and basil teamed with garlic and a bit of chilli heat πŸ’₯

You could easily add some extra veg if you fancy it too 🌱 you can sub some of the cherry tomatoes for bigger tomatoes if you have them (chop into smaller chunks before adding) but I defo recommend at least half cherry tomatoes for that delish sweetness πŸ…

Recipe serves 2
1 tbsp olive oil
5 cloves of garlic (enough for a heaped tbsp when minced)
1/2 tsp chilli flakes/crushed chilli (more if you like it spicy 🌢 )
550g cherry tomatoes
1 tbsp red wine vinegar
120g orzo
600ml veg stock

To serve:
Chilli flakes
Basil

Mince or very finely chop the garlic. Add to a large pot with the olive oil and chilli flakes. Soften for a few minutes until fragrant and then add the cherry tomatoes.

Stir over the heat for around 10 minutes until the tomatoes soften and start to blister. Remove a tbsp or two of tomatoes and put to one side to serve on top.

Add the red wine vinegar and turn up the heat slightly. Use the back of a spoon or spatula to press and break the tomatoes down. Add the orzo and stir to coat in the tomatoes. Turn the heat down again to medium.

Add in the stock and leave to simmer for around 15 minutes until reduced and absorbed. You might need to stir now and again to stop it sticking.

Once the orzo is al dente and stock has reduced, season well. Serve, top with the reserved tomatoes, chilli flakes and basil and enjoy!
