
This platter has:
A bed of greens topped with:
Caprese chicken breast (recipe below)
Hasselback baked potato (recipe on my website – link in bio)
Sweet kale salad
Steamed broccoli and fresh grape tomatoes
Steamed corn from the cob with a sprinkle of paprika
A drizzle of balsamic glaze over everything.

Caprese chicken:
Marinate the chicken:
Fresh minced garlic
Basil
Sea salt
Marinate at least 30 minutes
Cut horizontal slices across the middle of the chicken breast (but not through or across)
Stuff the slits with fresh basil, sliced grape tomatoes and pieces of mozzarella cheese.
Bake in the oven at 350ΒΊF for 30 minutes.
