4-INGREDIENT “HEALTHIER” BISCOFF CHEESECAKE (vegan, high-protein, no-bake)

INGREDIENTS:
Base:
✅ 3 Lotus biscuits
✅ 1 tablespoon biscoff cookie butter, meltee

Filling:
✅ 1 cup non-dairy yoghurt (I used soy)
✅ 1/3 cup (60g) vegan vanilla protein powder (I used @macr0mike vanilla buttercream flavor – my discount code is “amb-chen”)

Topping:
✅ 1-2 tablespoons biscoff cookie butter spread
✅ 1 Lotus biscuit crumbs for decoration

METHOD:
1. Make the base: crush the lotus biscuits and mix it in the melted biscoff spread until the mix sticks together a little. Press it down into the base of the jar. Set aside in the fridge
2. Make the cheesecake filling: Mix in the protein powder with the yoghurt until no lumps remain and the yoghurt thickens to consistency
3. Transfer the filling over the top of the biscuit base
4. Topping: Melt the cookie butter. Drizzle over the top of the cheesecake. Sprinkle the lotus biscuit crumbs over the top.
5. Place in the fridge for 10 minutes to allow the cookie butter to set before serving
